Some people call it Breakfast Sausage. Is fresh, blanched and unsmoked sausage, made from pork shoulder, ham and belly, seasoned with salt, pepper, garlic, and marjoram.
The most popular way to serve it is to boil it in water or sautéed it with onions. It is served hot or cold often with mustard or ketchup. It's also great on rye bread as a sandwich or "a la hot dog" like in our food truck for example.
